Working from the reference image and trying to figure out what's going on can be hard, make sure you have enough reference so you can see every angle of the subject, I find black and white images with high contrast really show the crevices and high areas, by working with images you will find you are training your eyes the more you do it the better you will get.
I find slowly building up forms is the best approach do not rush take it slowly and add the forms going from high to low resolution.
